New York-Style Cheesecake

  • Crust:
  • 1/4 cup of melted butter
  • 1-1/2 cups graham cracker crumbs
  • Filling:
  • 1-1/2 cups of granulated white sugar
  • Two pounds (32 ounces) of cream cheese, softened
  • 1/2 cup of heavy cream
  • 4 eggs
  • 1/4 cup of unbleached flour
  • 1 cup of sour cream
  • 1 tablespoon of vanilla
  • Directions:
  • 1. Preheat the oven to 350* Fahrenheit.
  • 2. Butter the sides of a spring-form pan, or use a 9-inch round pan, unbuttered.
  • To Make the Crust:
  • 1. In a large bowl, combine butter and graham cracker crumbs. Press this mixture into the pan, then freeze or refrigerate it while preparing the filling.
  • Make the Filling:
  • 1. In a large mixing bowl, beat the sugar and cream cheese on medium-high speed for 3 minutes.
  • 2. Blend in the cream. Add the eggs, one at a time, mixing well after each one is added.
  • 3. Mix in the sour cream, flour and vanilla until smooth. Pour the filling batter into the crust.
  • 4. Bake for one hour in the preheated oven. Allow the cheesecake cool in your oven for about 5 hours. Refrigerate it until fully chilled, about one hour, before serving.
